Meat-Lovers Pizza Bake

My collaboration this month for GO BOLD WITH BUTTER is a treat for anyone who loves pizza as much as I do. Now, I don’t know about you, but I’ll take any excuse I can get to eat pizza on a weekly basis. I guess if I really stop to think about it, I don’t actually need a specific excuse because as far as I’m concerned, weekly pizza nights might just be the best idea in the world. More of us should jump onboard this pizza train. Just in cause you’re in search of new and exciting ways to incorporate pizza into your life more often, this Meat-Lovers Pizza Bake is here to help. It’s meat-lovers because that’s my favorite type of pizza, but you can really customize it a hundred different ways. The options are limitless. If you’re not a fan of meat, you can easily omit all the meats I used and incorporate sautéed veggies instead. Or try a Hawaiian pizza flavor or even BBQ chicken. It’s all up to you! You hold all the power. I’m just giving you the idea and expecting you to run with it. Make it this week and you’ll be the hero to end all heroes. Who doesn’t want to be a pizza hero? I know I do. I really do though. 

Before we move on to the first step of this dish, we’re basically making homemade bisquick mix, so technically if you don’t want to make it yourself from scratch, then you can totally just use the store-bought mix and save yourself the time. In a large bowl, mix together the flour, baking powder, and salt. 

Cut in the cold diced butter using either a pastry blender or your fingers until the mixture resembles coarse crumbs. You want the butter in various large pieces. Just work quickly so that the butter doesn’t get too warm. 

**Tip: If you don’t have a pastry blender, you can also use a vegetable masher to work the butter into the dry ingredients. It’s a great multi-purpose tool!**

So at this stage you can totally place this mixture into a resealable zip-top bag or airtight container and store it in the fridge for up to 4 months and use it as you would bisquick mix. For this though, stir in the milk with a wooden spoon or rubber spatula, mixing just until combined. You don’t want to over-mix the batter at this point or else you’ll end up with a tough dry biscuit. That’s not good. 

Grease a 9 by 12-inch baking dish and then dollop half of the mixture into the dish in a single layer. Don’t worry about covering the entire bottom. You don’t need to because the mixture with bake and spread and be perfect I promise. 

Spoon half of the pizza sauce over the drop biscuits, and sprinkle with half of the cheese, half of the pepperoni, sausage, bacon and ham. 

Dollop the remaining biscuit mixture on top, again don’t worry about covering everything completely. Top with the remaining pizza sauce, and the remaining cheese and meats. Sprinkle with a bit more cheese on top if you wish. Finish off with a bit of cracked black pepper or Italian seasoning if you’d like. 

Bake in a preheated 375 degree F oven until puffed up, golden brown, bubbly and the cheese has melted through, about 30 minutes. Remove from the oven and let cool slightly before slicing and serving. 

I like to serve the pizza bake with an easy green salad on the side because it makes me feel better about my life choices. Also, it allows me to eat more pizza because I’m eating some healthy greens. 

 
If you’re feeling adventurous and just really want to take this over the edge you can serve the whole thing with ranch on the side for dipping and dunking and drenching. Ranch and pizza is a match made in heaven and I’ll fight you to the end about it.
