Peanut Butter Chocolate Chip Cookie Ice Cream Sandwiches

I’m creeping out from my spot under the air conditioning, where I’ve been camping out for the good part of the past couple of weeks. It’s been extremely hot in Los Angeles, and I’m sure it’s hot everywhere else, but for us Angelenos we are melting away into nothing. The only way I think we can all survive this incessant heat is by making and eating a few ice cream sandwiches. Not just any ice cream sandwich though. Every year I make an ice cream sandwich of the summer (like last year’s Oatmeal Rum Raisin Ice Cream Sandwiches). This year’s flavor is peanut butter meets chocolate chip meets cookies n’ cream and if you’ve never had this amazing combo before, then you have been missing out on something truly spectacular. If we’re all being honest with ourselves though, homemade cookies always take everything over the top. I’ve teamed up with my friends at GO BOLD WITH BUTTER to bring you these Peanut Butter Chocolate Chip Cookie Ice Cream Sandwiches. It’s a mouthful to say, let alone type, but it’s worth it.

So yeah these are ice cream sandwiches through and through BUT the important part of this recipe are the cookies. They’re homemade peanut butter chocolate chip cookies. We’re going to start by whisking together the dry ingredients. In a medium bowl, whisk or sift together the flour, baking soda, baking powder and salt. Set aside. 

**Tip: If you want to make these super peanut buttery, you can add a tablespoon or so of that peanut butter powder that you see these days at the peanut butter aisle!**

Cream together the softened butter, peanut butter and sugar until light and fluffy, about 5 minutes. Stir in the egg and vanilla extract and beat until well combined. 

Add the dry ingredients and mix until just combined. You don’t want to overly mix the cookie dough at this stage or else you’ll end up with some tough cookies. Then add in the dark chocolate chips and stir by hand until evenly distributed. 

**Tip: Again, if you really want to hone in on that peanut butter flavor, you can do a mix of dark chocolate chips and peanut butter chips. Likewise, if you want a crunch, you can add chopped roasted salted peanuts.**

Using a small ice cream scoop, scoop cookie dough onto prepared baking sheets, allowing 2 inches of space between cookies. Bake until lightly golden brown around the edges, about 8-10 minutes.

**Tip: Whenever I make cookies, I always use a small cookie scooper because this will ensure they’re all the same size. This is important for ice cream sandwiches because you want to be able to sandwich two cookies together and have them be similar in size.**

Transfer the cookies to a wire rack and allow to cool completely (and I do mean completely) before you start making your ice cream sandwiches. 

**Tip: If you want to make these ahead of time, you can make the cookies the day before and store them in an airtight container or ziplock bag until you’re ready to make the sandwiches.**

Once you’re ready to make the sandwiches, lay out half of them upside down onto baking sheets. Then scoop out a scoop of ice cream on top of each. So the flavor is completely up to you! You can use peanut butter ice cream or plain vanilla. You can use strawberry if you want a PB&J taste or you can do what I did and used cookies and cream and I regret NOTHING. 

**Note: We already took the time and trouble to make homemade cookies so I figured I’d save us some time by using store-bought ice cream. That’s okay every once in a while, trust me.**

Sandwich together with the remaining cookies and then place on a single layer on a baking sheet and freeze until firm, at least 3 hours or overnight. 

**Tip: If you plan on keeping these longer than a day, I suggest freezing them for 3 hours and then wrapping them each individually with plastic wrap and then placing them in a freezer storage bag and keeping them in the freezer for up to 2 weeks.**

 
The great thing about this recipe is clearly the ice cream sandwiches but also the homemade peanut butter chocolate chip cookies. If you don’t want the sandwiches (why wouldn’t you though) then you can by all means just take this post for it’s cookie recipe. It’s a good one to have on hand. The sandwiches are a good touch though because it’s so hot everywhere right now and they’re a great way to cool off.
